Eian and Laura’s Story
Laura started cooking at a very early age in rural Nebraska, where she helped provide food to her family’s wheat harvest crews. Baking bread, pizza dough, and cooking other dishes, she quickly discovered a strong, creative passion for food, and an insatiable drive to perfect her recipes!
As her passion continued to grow throughout the years, Laura would often find herself working in kitchens of all sorts. Her first job was at a steak house in Fort Collins, Colorado, and later she would work at various restaurants and bakeries in Brooklyn, New York.
Laura eventually settled back in Colorado, where she would often throw dinner parties to entertain friends, experiment with dishes, and further develop her recipes. Ultimately, she would co-own a restaurant in Steamboat Springs and cater for various events around town.
Laura’s son Eian was born in 1994. He quickly become his mother’s biggest cheerleader….and her biggest critic! Eian would often help out in the family business waiting tables at the restaurant.
Eian developed Neuroendorcrine Carcinoma, a very rare type of cancer, and passed away in 2016. His life and passing taught much to those he loved and those who loved him. To Laura, there was one lesson in particular that stood out:
”Life is short, and fragile. Get out there and live it!”
Laura would later come to live in Sheridan, Wyoming. Driven by her passion for food, and inspired by the lessons Eian gave her, Laura started The Lunch Box in 2024 to support the community she has come to cherish, and to honor the memory of her beloved son.
